Poppy Seed Chicken

This is an all time favorite recipe. Everyone loves it - even my husband who hates casseroles. It is incredibly easy to prep and freezes well also. There are a ton of variations of this recipe floating around the internet, but I find that a lot of them are too creamy. I've adapted this one just a tad, so that there's a little less sour cream.
Ingredients
(1) Rotisserie Chicken, shredded (you can use 4 Cups of cooked/shredded chicken breasts, but why?)
(3/4) Cup Sour Cream
(1) Can Cream of Chicken Soup
(2) Tablespoons Poppy Seeds (you can adjust this amount based on your preferences)
(1) Sleeve of Ritz Crackers
(1/4) Cup Melted Butter
Instructions
Preheat oven to 350 degrees Fahrenheit
Spray an 8x8 pan with non-stick cooking spray. I typically use the Publix organic EVOO cooking spray.
Add shredded chicken, sour cream, soup & poppy seeds to a medium-sized bowl. Mix well.
Spread the mixture into the prepared casserole dish.
Add the crackers & melted butter to a small bowl & mix together.
Spread cracker mixture over chicken and sprinkle with a few extra poppyseeds.
Bake for 30ish minutes until crackers a crispy and casserole begins to bubble

This is so easy to throw together and definitely a crowd pleaser. We often serve over rice with a side of green beans. Hope you enjoy it!
P.S. Drake figured out he's a big fan of sour cream :)
